What Can You Do with Canned Black Beans?

Yes, I keep a store of canned beans in the pantry. Really--who has time to cook dried beans all the time? I especially like black beans for their flavor and versatility. Here are 5 things to do with canned black beans:

  • BLACK BEAN SOUP: Puree in the blender with chicken stock, fresh garlic, onion powder. Top with a dollop of fat-free sour cream, chopped cilantro, avocado and tomato.
  • BLACK BEAN AND CORN SALAD: Drain a can of corn and a can of black beans. Add chopped tomato, cumin, a bit of garlic and green onion to taste. Add a swirl of vinaigrette. Chill and serve alone or on top of salad.
  • BLACK BEAN DIP: puree with garlic, onion, jalapeno and a bit of sour cream to make it creamy.
  • CHILI: add a can or two to your favorite chili con carne recipe
  • SALAD TOPPING: drain and rinse and add as a salad topping for protein and fiber
